You can use a mixer or a wooden spoon with your hand mixing.&lt;/li&gt;&lt;li&gt;Add the brown sugar and granulated sugar to the bowl. Continue to beat the sugar into the butter. The mixture should be light and fluffy with no clumps of sugar.&lt;/li&gt;&lt;li&gt;Add the lightly beaten eggs and vanilla and mix in thoroughly. Only beat the mixture for about thirty seconds or so. Do not over-beat the mixture.&lt;/li&gt;&lt;li&gt;In a separate bowl, add the flower, salt, and baking soda. Stir it all together with a whisk to break up lumps and thoroughly combine all ingredients.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Slowly add the dry ingredients to the wet ingredients, about 1/2 cup at a time. If you use a mixture, but it at the lowest setting to ensure the flour doesn't get all over the place.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;When the dough has formed, stir in the chocolate chips. It may be difficult. If so, use a dough hook on a stand mixer or use a wooden spoon.&lt;/li&gt;&lt;li&gt;Refrigerate the dough for 1 to 2 hours or overnight, if possible.&lt;/li&gt;&lt;li&gt;Preheat the oven to 350 degrees.&lt;/li&gt;&lt;li&gt;On an ungreased cookie sheet, drop the dough. Make it into 1 1/2 inch balls and space them 2 inches apart. You can use a cookie scoop or shape them with your hands. Try not to handle them too much.&lt;/li&gt;&lt;li&gt;Bake in the oven for 8 to 12 minutes or until lightly golden brown. Remove them from the oven and let them cool for 5 minutes. Transfer them to a cooling rack to continue cooling. The worst part is that you end up missing out on a lot of delicious food because it isn't healthy. You end up forgoing those recipes that are full of sugar, oil, starches, and preservatives because they aren't good for you.&lt;br /&gt;&lt;br /&gt;If you are trying to eat healthier, one of the best things you can do for yourself is to learn how to cook. If you know how to cook, you can take your favorite recipes and turn them into healthier alternatives. Change this ingredient, cut back on that, and so on. Doing this can allow you to eat the things you love without feeling as guilty. Of course, you still shouldn't over-indulge, but getting to try some classic treats is a big help to keep you on course.&lt;br /&gt;&lt;br /&gt;Healthy chocolate chip cookies sounds kind of like an oxymoron. How can chocolate chip cookies be healthy? They may never be as healthy as an apple or a carrot, but you can make healthier chocolate chip cookies by changing up the list of ingredients just a bit.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;3/4 cup rolled oats&lt;br /&gt;1 cup whole-wheat flour&lt;br /&gt;1/2 teaspoon baking soda&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/4 cup butter, softened&lt;br /&gt;1/4 cup applesauce&lt;br /&gt;1/3 cup granulated sugar&lt;br /&gt;1/3 cup brown sugar&lt;br /&gt;1 egg, lightly beaten&lt;br /&gt;1 teaspoon vanilla&lt;br /&gt;1 cup chocolate chips&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Grind the oats in a blender or a food processor. A coffee grinder works very well for this step. Put into a bowl and mix with the flour, baking soda, and salt. Mix it thoroughly to remove lumps and combine it well.&lt;/li&gt;&lt;li&gt;In a separate bowl, beat the butter. Use an electric mixer to make it easier. Beat for 1 to 2 minutes until it is fluffy and creamy. Mix in the applesauce, granulated sugar, brown sugar, egg, and vanilla. Beat just until the mixture is smooth and creamy.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Stir the dry ingredients in gently. If you are using a mixer, put it at the lowest setting. Stir until it is just combined. Stir in the chocolate chips and refrigerate the dough for about an hour.&lt;/li&gt;&lt;li&gt;Preheat the oven to 350 degrees and lightly grease two cookie sheets.&lt;/li&gt;&lt;li&gt;Form the dough into 1 inch balls and space them 1 to 2 inches apart on the cookie sheet. Bake them for about 15 minutes, baking one sheet at a time. The should be firm on the edges and golden brown on the top. Let the cool on the sheet for 2 minutes and then transfer them to a wire rack to finish cooling.&lt;/li&gt;&lt;/ol&gt;These healthy chocolate chip cookies are a great alternative to regular chocolate chip cookies. They aren't packed with sugar and they have healthier ingredients such as whole wheat flour, oatmeal, and applesauce. There are different tips you need to follow while you are making the dough and baking the cookies in order to get the texture you want. When you mix the sugar in with the butter, you want to beat it enough to get out the lumps of butter and sugar and to make it fluffy. When you add in the eggs, they just need to be incorporated. If you mix it too much at this stage, the batter will have too much air and the cookies will be fat and cake-like. This is the opposite of a soft texture. You can also freeze the dough, but leave it in the refrigerator overnight so that it defrosts before you use it. Also, put the dough back in the fridge in between batches.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Bake it Right&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;When you put the dough on the cookie sheets, make sure the sheets are not warm. At first, they won't be, but when they've been used, let the cool completely before putting on the next batching. Chilling them is even better. They won't be warm at all. Warm pan makes the dough melt and spread out before they hit the oven causing thin edges.&lt;br /&gt;&lt;br /&gt;Don't over-bake the cookies. Some people think the cookies have to be super golden brown before they are done. For soft chocolate chip cookies, this is the exact opposite of what you want. They should be lightly golden brown. They shouldn't look doughy, but they should be just browned. 8 to 10 minutes for a 1 inch cookie is usually plenty of baking time for most ovens. Here are two recipes, one for white chocolate chip cookies made with macadamia nuts and another made with chocolate cookie dough. Try just one or try them both!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;White Chocolate Macadamia Nut cookies&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1/2 cup (1 stick) butter, softened&lt;br /&gt;1/2 cup shortening&lt;br /&gt;3/4 cup brown sugar&lt;br /&gt;1/2 cup granulated sugar&lt;br /&gt;2 eggs, lightly beaten&lt;br /&gt;1/2 teaspoon vanilla extract&lt;br /&gt;1/2 teaspoon almond extract&lt;br /&gt;2 1/2 cups all-purpose flour&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1 cup coarsely chopped macadamia nuts&lt;br /&gt;1 1/2 cups white chocolate chips or chopped white chocolate&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;White Chocolate chip Chocolate Cookies:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 cup (2 sticks) butter, softened&lt;br /&gt;1 cup granulated sugar&lt;br /&gt;1/2 cup brown sugar&lt;br /&gt;2 eggs, lightly beaten&lt;br /&gt;2 teaspoons vanilla extract&lt;br /&gt;2 cups flour&lt;br /&gt;3/4 cup unsweetened cocoa powder&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;2 cups white chocolate chips&lt;br /&gt;&lt;br /&gt;These are the ingredients for each recipe. You can follow the same directions for each recipe as these are both very basic recipes for white chocolate chip cookies.&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;In a large bowl, cream the butter or butter and shortening for about 1 to 2 minutes. Stir in the brown sugar and granulated sugar until the mixture is smooth. Add the eggs and extracts and beat until thoroughly mixed.&lt;/li&gt;&lt;li&gt;In a separate bowl, combine all the dry ingredients. Put them through a sifter or use a whisk to combine them and get out all the lumps. Stir the dry ingredients into the wet ingredients. Stir in about 1/2 cup at a time and be careful not to get flour everywhere.&lt;/li&gt;&lt;li&gt;When the dry ingredients are mixed in thoroughly, stir in the white chocolate chips (and macadamia nuts).&lt;/li&gt;&lt;li&gt;Put the dough in the refrigerator for about 1 to 2 hours to firm up. Preheat the oven to 350 degrees just before you are ready to bake.&lt;/li&gt;&lt;li&gt;Form the dough into balls and place about 2 inches apart on an ungreased cookie sheet. If you are making both cookie recipes, keep them on separate pans. One might take longer than another and putting them on the same pan could result in overcooked or undercooked cookies.&lt;/li&gt;&lt;li&gt;Bake the cookies for about 8 to 10 minutes. The macadamia nut cookies should be lightly golden and the chocolate cookies should be set and not shiny. They will not brown. Be careful not to overcook the chocolate cookies.&lt;/li&gt;&lt;/ol&gt;These cookies make great snacks or dessert. They go great served with milk and/or ice cream. Now they even have the kind where you break the pieces apart and put it on a pan.  Pop in the oven, bake, and you're ready to enjoy!  This is great if you like that fresh out of the oven, warm cookie flavor.  You can buy cookie dough at the grocery store or get gourmet cookie dough. Sometimes cookie dough is sold as a fund raiser at schools by kids.&lt;br /&gt;&lt;br /&gt;You make fresh baked cookies but you don't have to worry about putting in the wrong ingredients or the wrong amounts or mixing it wrong. As simple as some recipes sound recipes seem to be, some people just aren't good at following these types of directions and mess them up anyway. If this is you, cookie dough is a great choice. You still need to be able to bake them right. Chocolate chip cookies aren't exactly fool-proof, you know.&lt;br /&gt;&lt;br /&gt;The absolute easiest way to get simple chocolate chip cookies is to buy them.  You could go buy a box of Chips Ahoy, but those aren't like homemade.  Check your local bakery or a quaint coffee shop and you can get some pretty amazing cookies. Maybe you love chocolate cookies, brownies, ice cream, bars, pudding etc.&lt;br /&gt;&lt;br /&gt;Chocolate chip cookies just wouldn't be the same without the chocolate chips.  It would just be a bland regular cookie.  If you really love chocolate, you could even make double chocolate chip cookies.&lt;br /&gt;&lt;br /&gt;The easiest way to do this is to look for a recipe.  You could find a chocolate cookie recipe and add chocolate chips or you could find a chocolate, chocolate chip cookie recipe.&lt;br /&gt;&lt;br /&gt;Another way to add more chocolate is to put in extra chips or chunks of chocolate.  Don't put in too many or you will just end up with chocolate bars with bits of cookie.  If that sounds good, than by all means, pour in the chocolate!&lt;br /&gt;&lt;br /&gt;Finally, you could also put chocolate on top.  Drizzle melted chocolate overtop or spread a chocolate butter cream frosting on top.  If you want to make triple chocolate chip cookies, make chocolate chip cookies with a chocolate dough, add in chocolate chips, and spread chocolate frosting on top.  Oh, that sounds sinfully delicious!  &lt;br /&gt;&lt;br /&gt;Mess around with these ideas by using white chocolate or caramel!  There are so many different flavors you could add. Make a dough or buy a tube of chocolate chip cookie dough.&lt;br /&gt;&lt;br /&gt;Make sure the dough has been refrigerated for at least 2 hours or more preferably overnight.  The dough must be cold if you want to avoid crispy or cakey cookies.&lt;br /&gt; &lt;br /&gt;Preheat the oven to the required heat and make sure it is preheated before you put the cookies in.  When the oven is preheated or almost there, you can start to put two inch balls of dough on an ungreased cookie sheet about 2 inches apart.  Do this quickly and try not to roll them between your hands too much or they will soften.&lt;br /&gt;&lt;br /&gt;Make sure the pan is not warm or hot.  If you are using the pan for a second batch, make sure it first cools completely.  Put it in the fridge to make it cold, this is even better.&lt;br /&gt;&lt;br /&gt;Bake the cookies for 10 to 12 minute or until lightly golden brown across the whole cookie.  You don't want it to be dark, but you want it to cook all the way.&lt;br /&gt;&lt;br /&gt;By not overcooking it, it will stay soft and chewy. Crumble the brown sugar with your hands after you measure it because brown sugar clumps easily.&lt;br /&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Next add the two eggs and teaspoon of vanilla. Mix it well but do not beat. Mix it just enough so that it is combined completely, but do not beat it. You do not want to add air to the eggs and batter which can be done easily if you beat it vigorously too long. This will produce cakey cookies and not chewy chocolate chip cookies.&lt;br /&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Next, stir in the dry ingredients, and then stir in the chocolate chips. Refrigerate the dough for at least two hours or preferably overnight. Preheat the oven to 350° F. make sure it is completely preheated and that the dough is still cold.
